<note>Buku Penanganan Hasil Perikanan ini oleh penulisnya ditujukan untuk mahasiswa  yang menekuni bidang Teknologi Hasil Perikanan, namun juga dapat dimanfatkan oleh masyarakat umum karena disajikan dengan bahasa yang sederhana.
Pembahasan dalam buku ini mencakup ikan segar, tahapan penurunan kesegaran, identifikasi tingkat kesegaran, bakteri pembusuk, memperlambat proses penurunan kesegaran, penanganan higienis, dan kerusakan selama penanganan ikan segar.
Tahapan penurunan kesegaran ikan mencakup  tahap pre rigor mortis, rigor mortis, dan post rigor mortis. Mengidentifikasi tingkat kesegaran ikan dapat dilakukan melalui pengamatan organoleptik, pengamatan fisik, pengamatan kimiawi, dan pengamatan mikrobiologi.
Untuk memperlambat penurunan kesegaran pada ikan dapat dilakukan dapat dilakukan dengan cara fisik, kimia, maupun biologis. Penangan ikan pun harus dilakukan secara higienis denga memperhatikan factor berikut ini yakni sarana penanganan higienis, peralatan higienis, bahan yang digunakan, karyawan higienis, dan lingkungan yang higienis.
Buku ini juga membahas tentang kerusaka-kerusakan ikan selama penanganan seperti ; luka, memar, keterlambatan penanganan,tertindih, burst belly, autolysis, melanosisi, black spot, gaping, ketengikan, freeze burn, mikroba pembusuk, mikroba pathogen, senyawa racun, senyawa pencemar, oksidasi, browning, busuk, penyimpanan, dan pengangkutan.
